Savory Green Pancakes With Tahini Drizzle

Sweet stacks get all the love, but we’re here for this savory take on our OG pancake mix. Simply sauté your favorite greens along with some scallions and garlic, then fold the veggies into the pancake mix. Top it all over with an umami rich tahini drizzle and some avocado for a plate of pancakes worthy of both breakfast and dinner. 

Prep Time: 5 minutes

Cook Time: 6 minutes

Servings: 6 x 4” Pancakes

Ingredients:

  • 2/3 cup otherworld Original pancake & waffle mix
  • 2/3 cup water
  • 2 scallions, thinly sliced
  • 1 cup baby greens of any kind
  • 2 garlic cloves, minced or pressed
  • cooking oil
  • pinch of salt

For the tahini drizzle:

  • 2 tbsp tahini
  • ¼ tsp soy sauce
  • ½ tsp maple syrup
  • ½ tsp rice vinegar
  • 2 tbsp water

Directions:

1. Add a bit of oil to a frying pan over medium-high heat, and saute the garlic and scallions for one minute. Add the greens and a pinch of salt and cook until the greens start to wilt, about 1-2 minutes. Transfer the veggies to a cutting board and chop them finely, so they incorporate into the pancake mix.

2. In a bowl, stir the pancake mix and water until just combined. (Do not over mix. A few lumps are a-okay!) Fold in the cooked veggies.

3. Pour the pancake batter onto a griddle or frying pan over medium heat (350°) and cook the pancakes for 4 minutes per side.

4. Let pancakes cool for a minute or two before serving. Drizzle with tahini sauce.

For the tahini drizzle:

1. Combine all the ingredients in a small bowl and whisk to combine. If the mixture looks too thick or grainy, add a bit more water.
