Banana Cream Pie Waffles

Banana cream pie, but make it waffle! Just a few plant-based pantry items transform into a silky vanilla custard that’s perfect for the days when you need to treat yourself!

Servings: 6 x 4” waffles
Ingredients:
For the waffles:
- ⅔ cup Otherworld Banana Chocolate chip pancake mix
- 1/2 cup water
- 1 tsp oil
For the vanilla custard:
- 1 cup almond milk
- 1 tbsp corn starch
- ¼ cup sugar
- ¼ cup coconut cream
- ½ tsp vanilla or a pinch of vanilla beans
- pinch of salt
Additional toppings:
- Whipped coconut cream
- Crushed graham crackers
- Sliced bananas
Directions:
For the waffles:
- Mix ingredients in a bowl until just combined. Cook on a hot waffle iron for 4-5 minutes, or until waffles are brown and easily release from the iron.
For the vanilla custard:
- Add ½ cup of the almond milk to a small saucepan and place on medium heat until it warms up.
- Meanwhile, whisk the remaining ½ cup of almond milk, corn starch, sugar, coconut cream, vanilla, and a pinch of salt in a bowl. Pour the mixture into the saucepan with the warm almond milk and whisk for 4-6 minutes, or until the custard thickens and coats the back of a spoon. Remove the custard from the heat and pour it through a sieve to remove any lumps.
To serve, layer the custard and sliced bananas in between each waffle. Top the waffle stack with whipped coconut cream and sliced bananas!
